Various Improvements before the first version can be merge into main

Reorganize folder structure
Put every route behind the /api prefix
Generate unique operation IDs in the OpenAPI schema
Change version to 1.0.0
Remove license information from OpenAPI schema
Refactor README.md Development setup in CONTRIBUTING.md
